Domaine Les Petits Lieux @lespetitslieux.bourgogne is a winemaking project inspired by the legacy of Henri Jayer, the legendary vigneron of Vosne-Romanée. The name itself — Les Petits Lieux (“small places”) — echoes Jayer’s core philosophy: an unwavering attention to every parcel of terroir, even the most modest. Today, the domaine is owned by Guillaume Rouget, a member of one of the Côte de Nuits’ most emblematic winemaking families — son of vigneron Emmanuel Rouget (Flagey-Échezeaux) and great-nephew of Henri Jayer. He leads the project alongside his wife Laure, the domaine’s chief œnologue, who shapes both its stylistic direction and technical identity. The winery is housed in the historic buildings and cellar where Henri Jayer himself once worked. Yet Les Petits Lieux is not a reconstruction of the past, but a contemporary négociant domaine with its own philosophy — one that honours heritage while deliberately forging an independent path. Operating as a négociant-vinificateur, the domaine works with grapes and grape must selected with rigorous attention to berry quality. Vinification is guided by a clear pursuit of fruit purity: 100% destemming and a deliberate avoidance of new oak, preserving terroir transparency and the wine’s natural texture. The current portfolio includes, among the red wines: Vosne-Romanée, Marsannay “Les Longeroies”, Nuits-Saint-Georges Premier Cru “Aux Bousselots”; and among the whites: Bourgogne Chardonnay, Bourgogne Aligoté, and Saint-Romain. Saint-Romain occupies a particularly symbolic place within the domaine — a cuvée of special significance. It was there that Guillaume and Laure first met, and today this wine stands as a subtle reference to their personal story and to the place where everything began. The domaine’s logo further reflects this bond with place and history: the willow tree, emblem of the Vosne-Romanée lieu-dit Les Saules, and the vibrant red hue, echoing the red shutters of the historic pavilion. In anticipation of the New Year, we invite you to imagine: “Bourgogne: What Will the Taste of the Future Be?” This is not an expert forecast, but reflections based on current trends.. Burgundy has built its taste over centuries on subtle details: soil depth and composition, vineyard slope, clone choice.. We are unlikely to see completely different wines, but dynamic changes may bring a new balance, texture, and evolving aromatic rhythm. Average temperatures are rising: Meteo France data show that seasonal warming has accelerated grape ripening; by 2050, average potential maturity could be 1–1.5° higher than in the early 21st century. Pinot Noir may reach phenolic ripeness earlier, with softer tannins and more accessible aromatics. Wines may be enjoyed younger, but their depth will remain, only unfolding at a different pace. Paradoxically, these changes may make differences between climats more pronounced. Soils, exposures, and elevations will stand out, and areas once considered “too cold” may become valuable: higher slopes (300–350 m), stony zones with cold drainage, and currently late exposures. Future «Grand Crus» may emerge in places now covered by bushes or forest. Drones, sensors, and ripeness monitoring will be standard tools, making climate risk management precise. This allows better control of ripeness and structure while preserving the individuality of each clone and microclimate. Taste will become more predictable, yet retain its character. Modern Burgundy consumers increasingly value ecological and sustainable practices, caring not only about taste but also about grape growing and soil health. And new tasting formats — masterclasses, gastronomic tours, online and pop-up events — change the rhythm of wine perception, favoring wines approachable young yet still rich for slow tasting. Domaine Robert Groffier Père & Fils @domaine.robert.groffier is a family-owned winery in Burgundy that has been masterfully working with Pinot Noir since 1823 and is now managed by the seventh generation of the family, Nicolas and Julie Groffier. The domaine is based in Morey‑Saint‑Denis (Côte de Nuits), but its vineyards are located in the finest plots of Gevrey‑Chambertin and Chambolle‑Musigny, including the legendary Grand Cru Bonnes‑Mares and Chambertin Clos‑de‑Bèze, as well as the renowned Premier Cru «Les Amoureuses», where Groffier is one of the largest owners. Other notable Premier Crus include Les Hauts‑Doix and Les Sentiers. The total vineyard area is approximately 8 hectares, with many vines aged between 40 and 80 years. The quality of their wines begins in the vineyard, with winemaking focused on a personal approach to each plot: soil management through sustainable viticulture, manual harvesting and sorting, and careful fermentation, sometimes including cold maceration to fully reveal the aromatic potential of the grapes. The wines are made exclusively from Pinot Noir, and since the 2014 vintage, some wines have been aged longer before release to offer already mature and balanced wines, characterized by elegance and depth. Its shape was easier for glassblowers of the XVII-VIII centuries to make than more “square” or angular forms: the smooth transition from neck to shoulders and the rounded body were simpler to blow and easier to standardize. By the XIX century, the Burgundy bottle had become so recognizable that it allowed people to distinguish Bourgogne from Bordeaux at a distance, becoming a form of identity embedded in the AOC system as a cultural code. Since then, domaines have continued to use it — not because they must, but because it is part of the region’s history. Another version attributes everything to the shape’s influence on the wine. Bottles with high “shoulders” (the Bordeaux bottle) slow the movement of sediment — ideal for Cabernet and Merlot, which produce dense, tannic deposits. Pinot Noir behaves differently: it creates less sediment, and it is finer in structure, so it does not require a “barrier” of shoulders during bottling. Thus, the Burgundy bottle is the result of a combination of factors: production history, the nature of the grape varieties, and tradition. The history of the Gros family dates back to the 1830s, when Alphonse Gros settled in Vosne‑Romanée. Over successive generations, the vineyards were divided among heirs, and in 1988 Anne Gros, the sixth-generation representative of the family, officially took over the management of the estate. Since then, the vineyard holdings have grown from 3 to approximately 6.5 hectares, and in 1995 the domaine adopted its current name. The vineyards of Domaine Anne Gros are located in the legendary Côte de Nuits. Among the key Pinot Noir plots are the iconic Grand Cru sites Richebourg, Clos Vougeot (Le Grand Maupertui), and Échezeaux (Les Loachausses), as well as prestigious village-level plots: Vosne‑Romanée Les Barreaux and Chambolle‑Musigny La Combe d’Orveau. White Chardonnay is cultivated on small, carefully selected parcels since 1994. The philosophy of Domaine Anne Gros is rooted in the desire to highlight the character of each terroir. We continue to introduce you to our partners, and today in the spotlight is another outstanding Burgundy estate. ⚜️Domaine Lamarche is a multi-generational family estate in Vosne-Romanée, closely linked to the great terroirs of the Côte de Nuits. The family’s roots date back to the 18th–19th centuries, and a key milestone was the 1933 acquisition of La Grande Rue — now a monopole Grand Cru between La Tâche and Romanée-Conti. This vineyard, which we have previously featured in our posts, remains in the family’s ownership to this day and has become the estate’s signature parcel. 🌱Over time, the estate expanded to around 11 hectares, including Clos de Vougeot, Échezeaux, Grands-Échezeaux, and several village and premier cru plots in Vosne-Romanée, forming more than a dozen cuvées. Since 2019, it has been named Domaine Nicole Lamarche, as Nicole now oversees winemaking and defines the estate’s style. 🍇Since 2010, vineyards are managed organically, with hand-harvested grapes carefully sorted. The winery has been modernized, with updated equipment, reduced new oak, and fermentation and maceration aimed at expressing terroir and pure fruit. Wines are aged 14–20 months in oak, depending on the appellation and the specific cuvée. 🍷Today, Domaine Nicole Lamarche’s wines are characterized by elegance, precision, and a delicate expression of the terroir, with a focus on the purity of fruit and floral aromas, without being overpowered by oak. Traditionally, on the third Sunday of November, wine enthusiasts, professionals, and collectors from around the world gather in Beaune, Burgundy. Here, the @domaine_hospicesdebeaune , which owns around 60 hectares of vineyards and belongs to the Beaune hospital @hoteldieu_hospicesdebeaune , holds its wine auction in the Halles de Beaune. All proceeds fund the medical institution, preserve its heritage, and support charitable causes. The auction, held annually since 1859, has become an iconic international event. The lots are 228-liter barrels (≈300 bottles) from the current vintage, called “pièces.” The average price per barrel and number of lots serve as indicators of the premium Burgundy market. This year, 539 barrels were offered: 428 red and 110 white, with total revenue of €18 754 670. A special lot, “The Presidents’ Piece,” is a single barrel whose proceeds are donated to charitable organizations. This year, funds will support technological and medical innovations for people with disabilities. Chosen from exceptional vintages or premium parcels, in 2025 it was a Pommard Premier Cru Les Rugiens. This lot always attracts media attention and the participation of parrains (or marraine, if female) — public figures invited to maximize donations. They denote the very top of the official hierarchy of vineyards — the climats, whose excellence has been confirmed over centuries of observation and continuous work with the terroir. 📖The term «Grand Cru» originated in France and literally means “great growth”: «Grand» = “great,” while «cru» is derived from the Latin «crescere» — “to grow.” It embodies the idea of a place where land, climate, and human skill reach perfect harmony. 🏞️Grand Cru sites are defined by ideal exposure, unique geology, distinctive microclimate, and a long history of viticulture. Generations of winemakers have confirmed their exceptional character. Wines from these vineyards evolve slowly, gaining depth, complexity, and longevity. Burgundy officially recognizes 33 Grand Cru appellations — 25 for red Pinot Noir and 8 for white Chardonnay — covering only about 1% of the region’s production (around 550–560 hectares: approximately 360 ha for red wines and 190–200 ha for whites.) Planting density generally exceeds 8,000–10,000 vines per hectare, yields are strictly limited, and harvesting is done by hand. Every wine undergoes mandatory tasting approval by the INAO (National Institute for Origin and Quality) to confirm authenticity and fidelity to the style of its terrior. Founded in 1979 by Bruno Clair, the estate @domaine_brunoclair is located in the commune of Marsannay-la-Côte, in the very heart of the Côte de Nuits. The Clair family’s winemaking history dates back to the early 19th century: Bruno’s grandfather, Joseph Clair, and his wife, Marguerite Daü, joined their vineyards in 1919 to create an estate officially registered as Domaine Clair-Daü in 1954. Following the later division of the family holdings, Bruno Clair took charge of part of the vineyards and began developing his own domaine under the name we know today. 🍇Today, the estate covers 27 hectares across seven communes and produces 31 different appellations — from Marsannay to Savigny-lès-Beaune. The Bonnes-Mares Grand Cru appellation is located in the Côte de Nuits, on the border of two communes — Chambolle-Musigny and Morey-Saint-Denis. It covers 15 hectares of highly expressive terroir: on the Chambolle side, the soils are lighter, dominated by limestone, white marl, and stony fragments, giving the wines aromatic delicacy, finesse, and minerality; while on the Morey side, the soils are deeper and heavier, with higher clay content, producing wines that are denser, more structured, and powerful. This duality makes Bonnes-Mares wines unique — here, the grace of Chambolle and the strength of Morey combine in a rare balance of elegance and depth. The 2015 vintage in Burgundy was one of the best of the decade: a warm, dry summer ensured excellent ripeness and concentration of the grapes with moderate yields. The vineyard classification system of Burgundy is among the most complex and detailed in the world. It has evolved over centuries, reflecting a profound understanding of terroir and winemaking traditions. Unlike Bordeaux, where classification is based on producers (Châteaux), Burgundy’s system focuses on geography itself — on the land. In the 13th century, monastic orders observed that certain slopes produced wines that were deeper, richer, and longer-lived than others. They began systematically identifying vineyards and distinguishing parcels with unique characteristics — a particular combination of soil, climate, and exposure. These observations laid the foundation for understanding how terroir influences the taste and quality of wine. In 1855, Dr. Jules Lavalle, a naturalist and botanist, published “History and Statistics of the Vine and Great Wines of the Côte-d’Or”, in which he proposed a classification of Burgundy’s vineyards. He divided them into five categories: hors ligne (vineyards not meeting quality standards), tête de cuvée (the finest sites), 1ère, 2ème and 3ème cuvée. This was the first attempt to scientifically explain why one climat was superior to another — and it became the foundation for the classification system that would later define the region. In the 20th century, after a series of viticultural crises, France moved toward formal legal protection of wine origins. CLIMATE CHANGE AND WINEMAKING IN BURGUNDY. Part 2 In addition to the gradual rise in temperatures, climatic anomalies — such as late frosts, heavy rains, and hail — also have a dramatic impact on grape yield and quality. The response of vines to climate stress varies between the two emblematic varieties of the region: 🥂Chardonnay is relatively heat-tolerant and often maintains balance and acidity even in warm years, but it is highly sensitive to spring frosts. 🍷Pinot Noir, on the other hand, is particularly vulnerable to heat and over-ripening, which can lead to a loss of aromatic finesse and reduced acidity. 🍇In 2024, the Burgundy harvest declined by almost 40% compared to the previous year, marking one of the most severe reductions of the past decade. In Chablis, a severe hailstorm in May destroyed up to 90% of the crop in some vineyards, delivering a significant blow to producers in the region. How are Burgundy winemakers adapting to extreme weather conditions? 🌨️Mechanical damage to grapes caused by hail reduces their integrity, accelerates oxidation, and increases the risk of disease. To protect the vines, winemakers use hail nets and generators, which disperse silver iodide particles into clouds to prevent the formation of large ice crystals. 💨Air stagnation within the grape clusters impairs phenolic ripening and can contribute to “off” notes, heaviness, and loss of freshness. During wet seasons, winemakers practice moderate canopy thinning to improve ventilation and reduce the risk of fungal diseases. ❄️To protect against frost, vines are equipped with heating systems (stoves, candles, heating cables) and sprinkler/irrigation systems, which create a protective ice layer around the buds. 🌱Additionally, delayed pruning is used to shift the start of the growing season, helping to avoid critical cold spells during flowering. Climate change affects winemaking in Burgundy? Part 1. 🌡️ Global warming is reshaping Burgundy wines. Since the 1980s, the region’s average temperature has risen by 1°C, causing flowering and harvests to occur 10–13 days earlier. Faster ripening increases sugar and alcohol: this makes red wines richer and more fruit-forward, but reduces their acidity and freshness. White wines, on the other hand, have become riper and more aromatic while retaining their elegance. Winemakers in the region are actively reviewing their practices and seeking ways to adapt in order to preserve tradition and quality through: 🍀Vine density and minimal leaf removal around the bunches, so that dense foliage shades the grapes and protects them from direct sunlight; 🌱Delayed pruning, which postpones the start of the growing season and slightly shifts flowering and ripening dates; 💧Avoiding deep soil tillage (“ploughing”), as it contributes to soil drying and water loss; 🍇Using late-ripening clones of Pinot Noir and Chardonnay, which mature more slowly and better preserve acidity. 🔝Additionally, there is a trend of moving vineyards to higher-altitude areas, such as the Hautes-Côtes, where vines are planted at 290–450 meters above sea level. Historically, these slopes were cooler, making ripening more challenging. In Burgundy, the word «monopole»carries a special weight. It means that a vineyard is entirely owned by a single domaine, which controls every step-from the vine to the bottle. This exclusivity ensures limited yields, rare wines, and a consistent style that reflects the domaine’s vision alone. Such wines are treasured because they express the purest face of terroir: no stylistic differences between neighbors, no blending of approaches — just one voice of the vineyard... and many carry centuries of history. ❔Why are monopoles so uncommon in Burgundy? After the French Revolution and the Napoleonic Civil Code of 1804, inheritance laws required estates to be divided equally among all children. Over generations, this fragmented Burgundy’s vineyards into smaller and smaller parcels. Most crus are now shared by many producers — but monopoles survived either through family continuity or by domaines gradually consolidating all the holdings. Today, there are fewer than 50 monopoles in Burgundy. ✨The Lamy family has been rooted in Burgundy’s winemaking tradition since 1640, but Domaine Hubert Lamy @domainelamy was founded by Hubert Lamy in 1973 with 8 ha in regional and village appellations. At the time, Saint-Aubin wines were undervalued compared to Puligny-Montrachet, yet Hubert’s precise vineyard work and careful vinification gradually earned recognition. Since the 1990s, the domaine has expanded to 17-18.5 ha, including prestigious plots in Puligny-Montrachet, Chassagne-Montrachet (Premier Cru Les Chaumées, Les Macherelles) and Grand Cru Criots-Bâtard-Montrachet, while its heart remains in Saint-Aubin. 🍇A stylistic turning point came in 1995, when Hubert’s son Olivier, after experience at Domaine Méo-Camuzet, took over. He pioneered very high-density planting, notably in Saint-Aubin Premier Cru «Derrière Chez Edouard» at 30,000 vines/ha (vs. 10,000 normally). In 2019, Isabelle and Jean-Marie Chapier acquired Domaine Pierre Naigeon in Gevrey-Chambertin, completely renewing its philosophy and team. Since 2020, the winemaker has been Julien Millet, son of François Millet, former cellar master at Domaine Comte Georges de Vogüé. Today, Domaine Les Astrelles farms 11.7 hectares across several prestigious villages — Gevrey-Chambertin, Nuits-Saint-Georges, Marsannay, Fixin and Ladoix-Serrigny — crafting 39 cuvées that range from Corton Grand Cru and and Mazis-Chambertin Grand Cru down to regional bottlings such as Bourgogne Aligoté and Bourgogne Hautes-Côtes de Nuits. Domaine practices organic viticulture with AB (Agriculture Biologique) certification. Careful soil management and manual labor minimize compaction and support biodiversity. This tradition began in the Middle Ages, when monasteries and ducal courts closely watched the quality of the grapes, knowing that the region’s reputation and wealth depended on it. Today, each domaine chooses its own start date, guided by careful observation of véraison and ripening, checks of sugar, acidity, and tannin maturity, tasting berries on the vine, weather forecasts, and the winemaker’s idea of the style of wine they want to make. Burgundy stretches almost 250 kilometers from north to south, so the harvest comes in waves, with a natural order: 🍇Mâconnais and Côte Chalonnaise in the south begin first: it is warmer here, and the grapes ripen faster. 🍇Côte de Beaune — home of the great whites, where the balance of acidity and ripeness means that Chardonnay is picked a little earlier than the reds, to keep finesse. 🍇Côte de Nuits comes after Beaune: this is the land of Pinot Noir, whose vines ripen more slowly. Natural Cork: Philosophy or Practicality? A wine cork is not merely a technical packaging element. It is an extension of the producer’s philosophy, reflecting their vision of the wine’s style, its evolution, and the experience they wish to offer the consumer. So why, despite all the risks (such as TCA contamination, variability in quality, and cost), do most winemakers continue to prefer natural cork? ⏳Natural cork allows microscopic amounts of oxygen to pass through, enabling the wine to develop slowly and gracefully in the bottle. For wines intended for long aging, this is a critically important choice. 🌿Wineries committed to sustainable viticulture often choose natural cork. Cork oak forests are valuable ecosystems, and cork production is a renewable process. Harvesting the bark does not kill the tree — the cork regenerates every nine years. Moreover, natural cork is fully biodegradable and recyclable (used for making shoes, designer items, and even new technical corks). We’ve completed our mini-marathon of tastings at Domaine de l’Arlot @domaine_de_l_arlot Founded in 1891 by Jean-Charles Viard, the domaine is located in Prémeaux-Prissey, just south of Nuits-Saint-Georges. Its heart is the Clos de l’Arlot, a walled vineyard (clos) set around a former estate once owned by Benedictine monks, which has become the domaine’s signature site. The unique microclimate and karstic terrain make this clos a true “wine garden.” 🌱Today the domaine covers around 14 hectares and, under the management of Géraldine Godot since 2014, has reinforced its reputation among the region’s refined producers. In Burgundy, many historic wine cellars built as far back as the Middle Ages have been preserved. They are true witnesses of history, with some dating back to the XIII–XIV centuries. Their vaulted ceilings remember generations of winemakers whose knowledge and skills were passed down orally, from father to son, from master to apprentice. 🏰These cellars, located beneath monasteries, old houses, and castles, are still actively used today for aging and storing wine thanks to their unique natural conditions. The underground galleries were carved into limestone, providing naturally stable temperatures (around 12 °C year-round) and high humidity (about 75–85%) — ideal parameters for wine maturation. 🍷Thanks to these characteristics, the wine matures slowly and harmoniously, preserving its aromatic balance and long-aging potential. The process of controlling the microclimate in such cellars is mainly passive: the stone walls “breathe,” and humidity levels are maintained through natural air circulation and groundwater. Last week was rich in encounters with winemakers for us. We had the pleasure of being welcomed at Domaine Jacques Prieur, where Nadine Gublin, the estate’s head oenologist since 1990, received us with great generosity. Domaine Jacques Prieur is a unique estate located in Meursault, embodying the exceptional heritage of Burgundy’s vineyards. The domaine manages 33 hectares of vines, covering 22 appellations, including prestigious terroirs in both Grands Crus and Premiers Crus, across the Côte de Beaune and the Côte de Nuits. 🌿Bio & Biodynamics in Burgundy: What’s the Difference?🌱 While both organic (bio) and biodynamic viticulture aim to respect nature and eliminate synthetic inputs, they differ in philosophy, practices, and depth of commitment. ✅ Organic Viticulture (Vin Biologique) focuses on protecting the environment and the health of the vine by banning synthetic chemicals. Key Principles: 🌱No synthetic herbicides, pesticides, or fertilizers. 🌱Copper and sulfur are used in limited quantities to fight disease. 🌱Soil health and biodiversity are promoted through cover crops, composting, and minimal soil disturbance. 🌱Organic certification (e.g. AB, Ecocert) ensures compliance with strict environmental standards. 🌙 Biodynamic Viticulture (Vin Biodynamique) builds on the organic foundation, adding a spiritual and holistic dimension inspired by Rudolf Steiner’s teachings (1924). This week, we had the pleasure of tasting the 2024 vintage from barrel at the family-run Domaine Coffinet-Duvernay (6.5 ha, Chassagne-Montrachet). ⠀ Since 2012, winemaking has been led by Bastien Coffinet, representing the fifth generation.
